Finely shred the cabbage, put in saucepan, cover with water, bring to the boil and drain. ‘Sweat’ the onion and apple in oil in a large pan for 5 minutes.
Add the cabbage, sugar, salt, lemon juice and spice. Stir well, coating the cabbage with the oil.
Put on the lid and cook gently for an hour, stirring occasionally until it is tender.
